Three Berry Mousse
Last Saturday Ayesha brought a vegan mouse to our Yoni Yoga event at The Sable Collective. It was so good I decided to try making it myself. Since Spring is in full swing this would be a great way to incorporate fresh berries into your diet.
1 cup raw cashews, soaked in water for 8 hours
1/3 cup coconut butter
1 cup coconut water
1/3 cup virgin coconut oil, melted to room temperature
1 1/2 cups strawberries
1 cup blackberries, fresh or thawed frozen
3/4 cup raspberries, fresh or thawed frozen
4 tbsps honey or agave
1. Add the cashews, coconut butter, and coconut water to a blender. Blend until smooth and creamy.
2. Add the fruit and honey, and blend again until smooth.
3. Finally add the coconut oil and blend just until incorporated.
4. Pop it in the refrigerator to chill for 4 hours then enjoy!
